Pork Fried Rice

  1. Start rice in rice cooker or on stove while prepping the remaining ingredients.
  2. Cube pork, and set aside.
  3. Shred carrots, and chop the green onions and water chestnuts.
  4. Break eggs into a bowl, add milk, salt and pepper, and whisk together. Set aside.
  5. Over medium high heat, add oil, pork, and any seasonings. My recommendations are the garlic powder, cayenne, and paprika listed in the ingredients list. Cook until there is no pink in the middle.
  6. Add carrots, green onions, and water chestnuts. Mix to combine.
  7. Add rice, and 3 TBSP of soy sauce to start. Mix to combine.
  8. Make a well in the middle of the rice mixture. Add whisked egg mixture to the well, and cook the eggs in the well. Do not mix egg mixture in with rice mixture until the eggs are cooked! Alternatively, you can cook the eggs in a separate pan if desired.
  9. Once eggs are cooked, sprinkle 1 tsp salt, and 1/2 tsp pepper over mixture, then mix together with rice mixture until well combined.
  10. Taste and adjust soy sauce and salt to desired flavor.
  11. Enjoy!
Recipe Notes

I make this recipe using reduced sodium soy sauce. I have also made it using coconut aminos, and Tamari sauce, if you are in need of a gluten or soy free alternative.
